Weekend Update!

Hi friends!

Finally Friday was my last day at my job...and it really was a nice day. I started my day extra early in the morning so I could get done by midafternoon, chart and turn my things in! So I was up by 5...although I really didn't sleep well the night before. And started seeing patients at around 7am. I bounced around the state until noon when I had finished getting everyone situated and in place, then it was back to the office to chart. I first ended up giving my patient report and ended up missing everone ordering lunch...so while everyone else ate, I just got to work on my charting. There was a lovely cake and a card and they bought me this delicious smelling tropical candle, which was nice. And I also wrote a thank you note to everyone which they seemed to like. I felt like everything was very tense and strained.

I had a nice conversation with my boss and she told me if I ever wanted to come back, they'd be happy to hire me. So that was nice! I think the initial bitterness after I gave my notice was gone! So I think it was good...I ended my day aroun 3:30 and came home to relax and get ready for my date with Brian!

The date started off badly...it was insane at the little shopping plaza and parking took me 20 minutes. It shouldn't have but for some reason people don't know how to drive! And then the wait at the restaurant was 45 minutes! Since all I'd really had to eat was cake at this point...I really was not feeling that good. But Brian was nice and we ended up really talking and getting to know one another...and now that we did that, I really think it really allowed me to see him better as a person. We talked about plans for the future and past relationships as well...and when I left I was feeling very off center about things, I needed to talk it out in my own head and with friends. I really didn't eat much at the restaurant we were talking so much...so after we parted ways I did something really bad...I binged. Yeah, I know...I thought I was past this too. I felt sooo sick after. I did it because I was nervous and unsure and...it was bad.

But I got back on track immediately on Saturday and am following through with good choices today. My mom and I are going to NEWPORT, Rhode Island! WOOOOOO! My mom got her official walking papers at work....she's losing her job next month and she does get severence but I felt like she could really use a weekend away. And what better time than when I have a whole week off work??? We're staying at the Jailhouse Inn in Newport, it looks so cute! We like little quaint places like that! And we're doing a wine tour, seeing the mansions, shopping, and having a fantastic time!!!!!! I'm super looking forward to it!!

Super Deedooper Weigh In Wednesday

Hi all!

Today is a WHIRLWIND day! I think it was the fact that I had a coffee yesterday at 2:30pm or so but I was wired! I could not fall asleep until well after 1am! And then I got up a whole hour before my alarm went off this morning, ready and raring to go! It's a VERY busy day! FINALLLYYYYYYYYY the last of my furntiure is finally being delivered...they better not screw this one up or I'm going to blow a fuse! I'm also getting a delivery of groceries this morning. Then I am running over to see my LCSW, praying that I can make it before my 10am appointment. And then tonight I am going out with my parents to Outback Steakhouse. I've never been there but I've already been over the menu and I planned my day around having their California Chicken Salad, which tickled my taste buds! Needless to say with everything going on, I will be running from dawn to dusk!!!

So let's start with weigh in... I weighed in on Saturday having lost the weight/fluid that I had put on the previous week and a half after a fender bender with a certain wagon. So I wasn't expecting miracles...but when I got on today I was pleasantly suprised! I also had my camera in the bedroom so I actually snapped a quick picture of the scale after I stepped off (don't want the few ounces that the camera ways to reflect on my weight, hahaha!).


-2 pounds from last week's weigh in!!!!!!!!!!

Heck yes! I am very happy with that! How can I complain!? I've been working hard and it paid off!

Over the last couple weeks I have been doing my very best to eat cleaner. I have relied heavily on Jenny Craig, Smart Ones and Lean Cuisine for quick easy meals. And don't get me wrong, I do love them! I always have a couple in my freezer if I really don't feel like cooking (I feel its setting myself up for success, choosing a frozen meal over ordering out). But I've been cooking chicken, doing my delicious taco salads, and last night I made a fantastic dinner!!! Here's the recipe!!



Slow Cooker Pork Tenderloin

Serves: 6 (approx 2.6-3oz serving)

Ingredients

2lb Pork Tenderloin - I only had a 1.6 pounder, it was a nature's promise organic pork tenderloin!
1 (1oz) Packet Vegetable Soup Mix - Or onion soup mix.
3/4 cup Red Wine
1 cup Water
3 tablespoons low sodium soy sauce
3 tablespoons minced garlic
1/2 medium onion sliced into rings
Black Pepper to Taste

Instructions

1) I used a 5quart crock pot. Put pork tenderloin in the crock pot, add all other ingredients.

2) Cook on low for 4-5hours!

3) Remove meat and let rest on a cutting board for approx 20 minutes covered in foil before serving.

4) ENJOY!

* How freaking easy is that?? I served mine with some Alexia Chipotle Sweet Potato fries and I put just a tiny bit of the gravy over everything. FANTASTIC!!

Week 5 Goals & A Countdown

I am so done with this job...I cannot even express to you all how much I can't wait to go. I'm trying to put in my all these last few days but they keep piling more and more things on my plate. THREE DAYS UNTIL I AM DONE WITH THIS JOB!! And I cannot WAIT. Seriously. I can't wait! So ready to first of all, have a few days off to do things like get an oil change, get my emissions testing done, clean the house from top to bottom, and spend time with my family! Secondly I'm super excited to start my NEW job! I cannot wait! YAY! I'm literally counting down the hours (24) until I'm out. Phew!

Okay so goals for this week...not the worst I've done!

NSV:

1) Get estimate on redoing the bathroom. It's TIME ya'll.
2) Go to the Bank - I hate the bank. But its serious now. I need to go.-  I didn't go! I had nooo time. I need todo this ASAP.

3) Donate those old clothes - NEED TO DO THIS. Still not done. My mom and I are going to do this one together!

WEIGHT GOAL:

3 POUNDS! This fluid or whatever need to GO! 3.4 THIS WEEK!

NUTRITIONAL GOAL:

1) STAY ON PLAN!!!!!!!!!!! Track on Sparkpeople!
2) 64oz of water Daily - I have been SLACKING.
3) Post new recipe
Exercise:

1) Walk x 7 Days
2) Bike x 3 days - It was too nice and I didn't do this.

Check In Saturday!

Well I weighed in today just to check in with myself and I was very pleased that I'm back down to where I was at 255.4. PHEW! That is actually 0.4 LESS than what I was before I wrangled with the wagon! So that makes me very happy! That puts me at a total loss of 3.4 for this week...I know that some of it was fluid but I definitely had a couple splurge days in there that weren't necessary!

Speaking of splurging...today I'm heading to my aunt's in Danvers, Mass for a family birthday party/celebration! We're celebrating a lot...most importantly, not having seen each other since the summer! It's so crazy how time flies and I'm sooo happy to get to see them. I was put on cake duty...I cannot bake worth a damn! I can cook, I LOVE to cook but baking is whooole different animal. So because I've been nutty I ordered a cake from a local bakery. *DROOL ALERT* It's a very light white cake with fresh fruit in it and topped with a whipped cream frosting. YUM! There will be a lot of food and family and fun, I'm going to focus on the family and fun and not let myself get caught up in the food! I have already planned for a little bit of extra calories today so I'm not too concerned either!

It's just a little before 7am and I need to hop along and get the cake. I hope that everyone is having a fantastic day! Enjoy!

TGIF!

This week has been beyond insane...I'm ready to tear my hair out with this job! I cannot WAIT to leave. I am literally counting down the seconds until I'm done. My boss has been piling everything on top of me. So on top of my usual schedule which is hectic as it is, now I have to train the new nurse...I've been putting in 12+ hour days and getting paid for 8 hours. So I'm so done. Today I took her out in the AM told her that she could do some charting on her own but that I was going home. And I do not feel bad about it. She can be there in the office (or go home and chart/relax which is what I suggested) and I told her to call me if there were any problems at all! So far have heard nothing...so that's good. She was doing excellent so I wasn't too worried about any of it. Honestly, I have put in more than my fair share this week so...that's it.

I've been doing excellent getting back on track. I have to tell you I found a meal that I just DIE for!! Turkey Taco Salad...omg so good. Used super lean ground turkey and seasoned it with taco seasoning and CINNAMON! Just FYI if you miss ground beef...try adding about 1tsp of cinnamon per pound of meat with your taco seasoning...it tastes exactly the same as ground beef. I served it to all of my mom's friends last week and they had no idea it was healthy or ground turkey. So I do Dole Shredded Lettuce, 2 tbsp salsa, 2 tbsp fat free sour cream and a 100 calorie Wholly Guacamole snack pack, with tomato, jalapeno, onion and then on top I crunch 2 whole grain taco shells that I bake in the oven prior to putting it on. OMG it is absolutely the best thing I've ever had. I have been eating it every day for lunch or dinner...so healthy, fresh, and YUMMY! YAY!

I've been doing well with eating and walking, but I've just been so busy. It's been constant. Even on my day off they were calling me. I had contractors out to determine how much it would cost to redo my tiny bathroom ($7700) and the AC unit which is from the 70s ($8100). Needless to say, I won't be doing that any time soon. I am going to start putting money away for the bathroom and/or AC unit (the AC unit I had serviced this year and they said its old but it works just fine so...I may wait until that one goes). And as for the bathroom, it's functional...its just not what I want it to be. But I can definitely wait. I don't want to cheap out and do low end work...I want the marble on the wall, I want the granite vanity...and a brand new toilet so I don't have the squat on the ground pretty much. It will get done...I know it will!

Anyway, I hope all of you are having a wonderful day. This weekend I'm going to my AUnt's for a party and I'm doing some cooking. I also bought the cake so I have to pick that up early tomorrow. It'll be a bit tough for eating and I know there will be some splurges but hey, I will get back on track no problem!

Weigh in Wednesday!

It is AMAZINGLY busy today, I can't even tell you! I have the AC specalist coming out to give me an estimate on what it would cost to redo my AC system (which will NOT be getting done this year). I just want to get an idea so I can have money set aside so if it does go, I'm prepared. Then I'm having the guy come from Bath Fitter to see if I can redo the bathroom/tub this year. It's getting insane! The tub is old and (although very clean, no mold!) gross. It has ugly 70s yellow tile and the shower head which was replaced when I moved in is wobbly and I am afraid at any minute it's going to fall off! So I need to see how much this will cost me too. Then Comcast is coming out...I've been having cable problems and my roomie asked for cable in his room so I am putting that in (and increasing his rent). Not to mention I'm getting a delivery of groceries today. AND my mom is coming over for dinner! AHHHH! Hah but its a good busy and things are getting done!

WI today was not spectacular, I'm still up! I weighed in and 257.4 today. But over the weekend I weighed in and was up to 262, HOLY CRAP! Can you believe what fluid will do? I've been really good and back on track so I'm planning on weighing in again Saturday to see where I'm at. I'm heading in the right direction and I know I'm making healthy choices!

I made an AMAZING BREAKFAST!!!! As you may or may not know, I am obsessed with Hungry Girl egg mugs! But I was all out of veggie sausage...so I started getting creative. I looove Spicy food. I'm a fiend for anything buffalo! So when I saw her buffalo chicken egg mug, I HAD TO MAKE IT. The only problem? I didn't have the chicken cooked and it was frozen solid. HOORAY FOR BEING CREATIVE! Here's my (meatless) take on Lisa Lillien's Buffalo Chicken Egg Mug!!!

Ingredients:

2 Morningstar Farms Meatless Buffalo Wings
1 Cup Egg Beaters
1 tsp. dried minced onion
1 tsp fat free bleu cheese dressing
1tbsp shredded parmesean
Hot Sauce - To Taste

Instructions:

1) Prepare Morningstar Farms Buffalo Wings according to package directions (in the oven makes them crispy and yummy). When they are finished take them out and let them cool a little.

2) As soon as the buffalo wings come out, combine 1 cup of egg beaters and the dried minced onion, stir and microwave for 1 1/2 minutes.

3) Cut up the buffalo wings with a fork to small, bite sized pieces. Carefully add the chopped chicken into the egg mixture and stir gently. Microwave again for 1- 1/2 minutes.

4) Let the egg mug cool for a few seconds on the counter. Top with bleu cheese, parmesean and hot sauce to taste.

5) DIG IN!!!!!!!!!!!!!

WHAT AN AWESOME BREAKFAST! I loved it, it was soooooooooo filling! Tonight I'm making taco salad for myself and my mom. A healthy version with ground turkey, a tiny bit of fat free sour cream, healthy guacamole, lettuce, tomato, salsa, onion, and just a little bit of taco shell for some crunch! I can't wait!! My mouth is watering just thinking about it! YAY! HEALTHY EATING!

Week 3 was not a good week for me...bad eating, not as much exercise as I might have liked and I was up 3 pounds! Now...I'm not sure if some of that is fluid retention from AUnt Flow because honestly, I didn't go crazy with eating! Or maybe its the fact that its hot and I'm retaining some water and also had a gain? Well anyway, that needs to GO! I need to get my ass back on track! NO EXCUSES!

NSV:

Wagon? What Wagon?

I don't even know how it happened! One minute I was on the wagon and the next minute I fell off... maybe hit my head on the way down!

The last week has NOT been good at ALL for eating. It could be that Aunt Flow is in town and I've wanted to eat the wallpaper off the walls (thankfully I don't have any wallpaper in my house). I'm up THREE pounds, UGHHHHH. This is not good...not good at all. So today I'm back on plan! NO EXCUSES!

I already had a delicious egg mug, a version of the Hungry Girl All American Egg Mug which I posted a while back. It's very filling and protein rich! And then my mom is coming later this afternoon and we have a big walk planned! I'm also doing the housewife workout today. Activity is on the plan for today!! And then tonight I have already put in my calorie levels since I'm having some leftover pasta sauce and low carb pasta, salad, and a 4oz glass of wine. I already know that I can make excellent choices! Now I have to DO it!

So...you're probably wondering how my date with Brian went. Or maybe you aren't but I'm going to tell you anyway! It was nice...I'm struggling now with the fact that I don't feel this overwhelming sense of passion when I'm with him. He's nice. And he bought me THE MOST BEAUTIFUL FLOWERS I've ever seen.

We had a nice dinner, cooked by me. I made my famous spaghetti sauce. It's kind of from a family recipe but I make it my own. And everyone loves it! Even my grandmother who wrote the original recipe! It simmers all day on the stove (or in a crock pot) and gets thick and delicious and perfect! Brian loved it! And then we decided to watch a movie and he chose Bridesmaids. Which I forgot how raunchy that movie is, oops! Afterwards we had some dessert and we kissed. I don't know wha I was expecting. It was nice...but I didn't feel any chemistry. It was just nice.

So now I have to figure out where this is going. I think a few more dates are in order just to see where we stand but I don't know! Any advice for me? I feel like I'm not experienced enough in these matters to make decisions...which is new to me! Because in my career and in my life, I MAKE decisions on a daily basis. Life and death decisions sometimes! So not knowing what to do is consuming my thoughts...

HUGE NEWS!!!!!!!!!!!!

I know I've been a little cryptic over the last few weeks about things going on in my life...because there are BIG changes a'coming my way! I ended up not weighing in today after feeling totally bloated and awful. Aunt Flow is in town and...I didn't need to add to my stress. Two major things today...the first is that Brian is coming over in about an hour. And yes, I am a nervous wreck.

But more importantly.

I GOT A NEW JOB!!!

I've been working for a very small company for over a year and a half now and finding that I was stuck in a rut. I feel like oppertunities for growth are few and far between. I love my patients, I adore my coworkers but...it's time for me to be challenged! The pay bump and better benefits...plus reducing how far I have to drive a day are a huge bonus. I still am obligated to work 1 weekend a month but it's completely different. I don't have to be on call. I get my visits in advance and then the weekend is MINE! No waiting around for someone to call me and force me to go out to do visits. I will still have my Wednesdays off too! Yipee!!!

This is a HUGE oppertunity for me and I feel so blessed that I have gotten the job! My interview was fantastic. I met with my new manager who is very smart, she has homecare experience and is still going out in the field. So she knows everything we deal with on a daily basis. This is going to be AMAZING.I am soooo excited!!

I'm giving my 2 weeks notice tomorrow and that means I have a few days off before I start the new job. It'll be great to get some things in order and especially get things done in the house. I am just walking on sunshine right now! I cannot WAIT! HOORAY!

Now to pace the floor and be nervous before Brian comes over. I'm making spaghetti with my famous secret recipe. Maybe I'll post it on my blog... hehe. Salad and garlic bread will also be had! Also put in my Sparkpeople nutritional counter! Making good choices, yummy!

RFS Week 2 Check in and Goals!

Hi all!
After my Easter shopping success I have a lot of nice "new" clothes to wear! And that's good...because Brian and I are going out on Wednesday. Or should I say staying in? He'll be coming over here, with the full knowledge that nothing is going to happen, ahem. But I'm going to be cooking and showing him my place! My mom and her friends from work are coming over on Thursday for a healthy Mexican fiesta prepared by me, so I really needed Wednesday to get things ready...and I'll tell you more about the big changes coming up in my life after that day! YAY! Lots of exciting things happening and now to my Ready for Summer goals!

NSV:

1) Go through my closet and purge the clothes that are too big when my new clothes arrive!
2) Hit up the donation box at goodwill and donate the scrubs in size 3x that are way too big! - I didn't actually get a chance to go donate things, with the hustle and bustle of Easter I totally forgot!

3) Eat up the things in my fridge and freezer. Doing a great job with this!


Weight Loss Goal:

** I am weighing on on wednesday. Looking for a 1lb weight loss since Saturday! Lost OVER a pound YAY!

Nutritional Goal:

1) Track religiously on Sparkpeople.
2) Make good choices eating out and on Easter!- I definitely made good choices eating out and made PRETTY good choices on Easter. I could definitely have made some better choices, like not eating a Cadbury egg...but I'm not feeling bad about it!

3) Increase fresh fruit/veggie intake.
Exercise:

1) Walk x 7 days
2) Exercise Bike x1

3) Try a new exercise!  - The Exercise is stil lacking. I am doing a lot more walking and HARDER walks but I just can't seem to motivate myself to do more. This needs to get fixed.

NSV:
1) Clean the house DEEP CLEANING!!!!

2) Get the old raggedy chair to the dumpster.

3) Use lotion Daily - I bought Jergens with the tanning stuff in it so you just use a little every day and it looks like you're tan! I'm so fair that I can't tan so I'm going to be using this!

Weight Goal:

** 1 pound Loss - After Easter I'm not expecting a huge loss, fingers crossed!

Nutritional Goal:

1) Stay on track while having people over to eat.

2) Track Religiously on Sparkpeople

3) Try a new recipe.

Exercise:

1) Walk x 7 days

2) Exercise Bike x 2 days

3) Weights x 3 days

Blessed Pasover and Happy Easter to All! (Tons of Pictures)

Hi Everyone!

I had an amazing weekend so far full of family and fun! I got up early on Saturday morning and went down and hit the second hand shops. If anyone's in the CT area, there's a place in Southington that's called Uptown Consignment...Holy CRAP! I made out like a BANDIT! I have to show you some of what I got! Also (not pictured) I made out at goodwill and got 2 sweatshirts to wear over my scrubs while I'm working, one for 2.50 and one for 5.00! And then at Old Navy later I got a new tank top and another new sweatshirt to replace my old raggedy ones for $16 total!

All in all I got a totally awesome, brand new wardrobe for less than 100 bucks including something you wil NOT BELIEVE!

Man I had a great shopping weekend. Eating hasn't been too bad! I splurged a bit, have eaten a little Easter Candy but have been focusing on eating a lot of fruit and sticking to plan!!! Looking forward to the easter dinner I'll be cooking, woo! Brussels sprouts, ham, lima beans, carrot & turnip, WOO! And I bought my parents an Edible Arrangement for Easter so we've been eating tons of fresh fruits. AND ITS SO CUTE!

Post Date Update

Sooo... yesterday was kind of amazing!

Also a huuuge shout out to Monica and Taryn (And my BFF Lise) for talking me down after I needed a good chat. Haha, oh man. I have come to the realization that I don't know anything about relationships. And I'm very nervous. I spent so much time focusing on my career and also believing that no one could ever want me. So... this was all new for me!

Brian and I met at the theatre to see Hunger Games! YAY! SO I insisted on paying for the tickets and we headed in. The movie was great and during the sad parts, Brian put his arm around me when I was teary. It was very nice. I didn't feel pressured or anything. And I think because it was Wednesday, there weren't many people in the theatre. So it was kind of like being alone there! We didn't get any snacks for the movie but I wasn't really that hungry. I had put in calories for a full meal and half a piece of cheesecake for dinner, but I ended up just eating a piece of cheesecake as my evening meal. Not the healthiest dinner but...I stayed well within my calorie and nutritional levels and enjoyed every bite! I ate a lot of veggies and lean meat for breakast and lunch so that I was full but didn't use a lot of calories or fat. Worked out really well for me!

After that we parted ways...I got a kiss on the cheek! I gave him one as well ;). But it was very nice. He is very respectful of me and also told me he's very shy. And I am shy too! So it was nice and we'll be making some plans for soon. He's been texting me all day, lol. So I think that's a good sign!

So that was it! We'll see where this goes!

From the Doctor's Office

So I had my MD appointment today and this is an APRN that I've never seen before. I really liked her! She was very supportive of my weight loss and was happy I had lost weight. So that was good, I don't have any compliants medically. And she said she was very impressed I had come in for a physical after such a long time!

One thing we're going to be watching (And I'm seeing my endocrine guy for an ultrasound/biopsy on Friday the 13th (EEK!)) is that the APRN found some lumps in my THYROID! She showed me where they were (one on my neck near my trachea and a couple of smaller ones down further on the opposite side). Thyroid nodules usually aren't anything to worry about...most of them aren't cancer but...it's worrisome. I also have a couple of moles she wants to watch but she said it's nothing serious. But Friday the 13th I go in for a full GYN workup and to have these nodules ultrasounded and biopsied there in the office if they look suspicious. I called my boss and took that day off. so I can recuperate..I also need to have bloodwork done on that day blah. But at least they have an on-site lab!

Good thing I went!!

One thing I didn't particularly care for was the medical assistant they have. I don't know why they keep her around! She BARELY speaks English which is not a problem generally but she doesn't listen. And apparantly doesn't know how to take vital signs. She took my height...which on previous visits she has told me I'm 5'6. I am NOT 5'6. My mother is 5'6 and I'm a great deal taller than her. Well today she finally figured that out and was like "Oh you grew two inches from your last appointment.". No I didn't. You don't know how to measure someone. And then she took my BP and said it was 130/80. That is INSANE! I usually run low! So the APRN decided to take it after she saw the reading and my previous readings from other visits...what did she get? 112/72. That's where my BP usually is.  She even took it on the other side to be sure and it was the same.

It pisses me off when people don't listen to me. I also told her that my weight was 255.8 today and she proceeded to weigh me anyway. With my shoes, my coat, and a heavy sweater, jeans, I was 259 so...that's actually good. I had also eaten breakfast and lunch at this point. I wasn't too concerned about it. I know where I stand with my weight loss! But the woman just doesn't listen! Oh well, we'll find out what happens!

Up and Adam Weigh In Wednesday!

Hi all!

Today is already busy...and I kind of wish I had time to sleep in and relax! I hurt my neck something fierce yesterday and I don't know what happened! I had already seen two patients and then I was stepping out of my car and grabbed my bag, then I got a horrible shooting pain in my neck! It felt like I had a huge kink and it was worse on the left side than the right. I nursed it for the day, took some tylenol but man! That hurt! It's a little better today but it's still nagging at me. Thankfully I'm going to the doctor today...

This in itself is a huge NSV. I have been avoiding going to the doctor since I started gaining back the weight I lost in 2008. In 2006 at my pre-college physical, I had an APRN ask me in a very rude manner "Have you ever heard of Weight Watchers?" And then proceeded to tell me in the rudest way possible that I was, no sugar coating it, fat. Let me just tell you that as a healthcare providor when I'm discussing weight management and diet, I don't go in with guns blazing. It really turned me off and I refused to go in for any reason...until June 2010 when I started having very severe menstural bleeding. If this is TMI stop here! I was passing clots the size of lemons and had been having my period for 3 weeks straight at this point and was very dizzy and weak. She told me after a 2 minute exam that the reason this was happening was because I was fat and I really needed to see a specialist. So...I went to see a GYN specialist who I love! He is amazing...and he really helped me get back on track. He said I had some insulin resistance and PCOS. And as a courtesy had my records faxed over to my PCP...

So the APRN calls me and starts hollering about how I have diabetes. LOL. I do NOT have diabetes. I wasn't even close to being at the A1C level of being diagnosed with diabetes. But this just goes to show you how she is...thankfully I've been told she isn't a part of this practice anymore. I'm seeing a different APRN who I hope is better. After all, it's taken me 4 years and 50+ pounds lost to be comfortable enough to go back. And yes, to anyone who wishes to know, nurses are the worst patients in the world! We know what's going on and we're not going to take a doctor's BS...unless something is going to fall off or I might die imminently, I'm guilty of "just letting it go" all too often, lol. Not that I get sick that much or have needed a doctor....especially now that I'm feeling so amazing!

So, weigh in time! Last time I weighed in was on Saturday! So I wasn't expecting too much...

I realized that I didn't set a weight goal properly. I didn't give a number...and this one is a huge one for me. In 20.8 pounds...I will be at my HALFWAY GOAL!!!!!!!!!!! Can you believe it?

Today I'm also seeing my LCSW, we have so much to talk about!! And tonight I'm going out with Brian again...I'm kind of excited! We're going to see the Hunger Games movie and then going out for a late bite at the Cheesecake Factory. I already have my calories figured out for going out tonight and everything is track. Staying on plan is very important to me! I even spared a few calories for cheesecake! WOO! The movie is at 6:15 and dinner probably won't happen until 9 or so...so I may or may not update you on the date tonight. But never fear, tomorrow's a new day!

Week 1 Review & Week 2 Goals

Oops! Forgot to write my goals yesterday! But that's alright...let's take a look at the week in review!


NSV:

1) Get my house organized and ready for new furniture.

2) Enjoy the conference I'm attending Wednesday and use the knowledge in my clinical practice.

3) Buy some new clothes at the Goodwill (I'm falling out of everything)
Weight Loss Goal:

* - Lose 1lb this week. - Only lost 0.2. Need to step it up and make better choices this week!

Nutritional Goal:

1) Make good choices when eating out. Food is provided at the conference and I have a date that evening at the Cheesecake Factory. HEALTHY dining out choices.

2) Track religiously at Sparkpeople.com

Fitness Goal:

1) Walking x 7 days. BIG walk on Sunday w/ mom
2) Park far away from clients' homes and walk extra distance with weight of supplies.
3) Exercise bike x 1.  - Didn't make this happen but I did 2 extra long walks!

SO week one wasn't a total fail! I definitely know what I need to work on!

1) Go through my closet and purge the clothes that are too big when my new clothes arrive!

2) Hit up the donation box at goodwill and donate the scrubs in size 3x that are way too big!

3) Eat up the things in my fridge and freezer.

Nutritional Goal:

1) Track religiously on Sparkpeople.

2) Make good choices eating out and on Easter!

3) Increase fresh fruit/veggie intake.

2) Exercise Bike x1

3) Try a new exercise!

Well...

My furniture delivery did not go as planned. I should've known. Apparently they forgot my ottoman at the warehouse and now I have to wait until April 18th to get it! I am LIVID! They refuse to give me a time then I can be home to recieve my delivery. So basically you have to wait all damn day for it! I was beyond angry...I had to wait 3 weeks the first time and now another 2 1/2 weeks for this? Ridiculous! And then they act suprised when you can't just sit around and wait for delivery all day! Hellooo I have a job?

But I do have the couch... here are those pictures I promised! AND the recipe!

YAY! Once I get the ottoman my living room will be complete. I've also thought about buying the matching chair since my red chair is really kind of falling apart. It never really occured to me until I got my new furniture and I saw how gross it was. It's over 8 years old and has some stains on it...from my brother using it when he ate on it when it was at my parents' house. It's microsuede and is very hard to clean!

Now onto the recipe! My Hungry Girl Sesame Chicken!

I take absolutely no credit for this one! Lisa Lillen is a genius!

Hungry Girl Sesame chicken and I was feeling naughty so I served it with some Lean Cuisine Garlic Chicken Spring Rolls!


Ingredients:
10 oz. raw boneless skinless lean chicken breast, chopped into bite-sized pieces
1/8 tsp. salt
1/8 tsp. black pepper
1/4 cup Egg Beaters
1/4 cup whole-wheat flour, divided
1/4 cup water (Lisa uses chicken broth but I didn't have any)
1 tbsp. cornstarch
2 tbsp. sugar-free pancake syrup
2 tbsp. seasoned rice vinegar
1 tbsp. ketchup
1/2 tbsp. lite/low-sodium soy sauce
1/2 tsp. sesame oil
1/2 tsp. minced garlic
1/2 tsp Sriracha
1 tsp. sesame seeds
Optional: crushed red pepper

Directions:
Preheat oven to 375 degrees. Spray a baking sheet with nonstick spray and set aside.

Place chicken in a bowl, season with salt and pepper, and cover with egg substitute. Toss to coat and set aside.

Place 2 tbsp. flour in another bowl. Use a fork to transfer half of the chicken to the flour bowl, allowing excess egg substitute to drain back into the egg bowl. Thoroughly coat chicken with flour, and then transfer to the baking sheet. Wipe the bowl clean, and then repeat with remaining flour and chicken.

Bake chicken in the oven until fully cooked, about 10-12 minutes.

Meanwhile, to make the sauce, combine broth with cornstarch in a small nonstick pot and stir to dissolve. Add syrup, vinegar, ketchup, soy sauce, sesame oil, and garlic. Mix well and bring to medium heat on the stove. Stirring often, cook until thick enough to coat a spoon, 2 - 3 minutes. Set aside.

Place cooked chicken in a bowl, top with sauce, and toss to coat. Sprinkle with sesame seeds and scallions. If you like, add a sprinkle of red pepper flakes. Eat up!

*I did make some personal changes to this recipe. I didn't have any chicken broth so I used water. I also thought the sauce was way too sweet so I added spicy sriracha to the sauce! It was GOOD! This is definitely one to try, especially if you love Chinese food like me!!!!
