Kids are back in school, life is picking up after summer. It'll start to get chillier and the days will get shorter. The last thing you want to think about is: What's for Dinner? In anticipation of dinner ruts and cool Autumn nights, I will be posting 30 recipes that are delicious AND diet friendly! Some are for dinners, others are quick easy lunches, or side dishes that you can put on your Thanksgiving table (for my American followers). Some are chicken, others beef, turkey, vegetarian and/or vegan. All are appropriate for a successful diet!

PUMPKIN SPICE LATTE!
Makes: 1 Latte
Ingredients:
1 cup hot skim milk
1 packet splenda
1/8 teaspoon vanilla extract
1/8 teaspoon pumpkin pie spice
2 ounces double-strength brewed coffee
1 tablespoon cool whip free
Instructions:
1) Heat the milk in a sauce pan over medium low heat (DO NOT BOIL!)
2) Add hot milk, splenda, vanilla extract, and pumpkin pie spice in a blender; blend until frothy. Pour the mixture into mug. Pour 2 ounces coffee into mug.
3) Garnish each mug with whipped topping and a pinch of pumpkin pie spice (if desired)
Nutritional Breakdown!
To me, Pumpkin Spice Latte is the first taste of fall...now it can be yours! Compare with a Starbucks Grande (medium size) pumpkin spice latte with whipped cream which is how they make it if you don't specify nonfat, no whip, etc.
